... Or give me pointers.
I am not a very experienced brewer. At this point any amount of experimentation is taking water over my head, really.
Possibly, this would be an inordinate amount of experimentation even for seasoned veterans of the hobby.
However, here's the plan:
Mission statement I want to conduct this experiment to test the feasibility of controlling as many parts of the process of turning raw ingredient (i.e. grains) into beer as possible, without making any large investments (e.g building my own kiln/malting equipment).
This will be an urban mix between farmhouse brewing and prison oenology -- use what you've got.
Equipment Simple BIAB set-up Sous vide immersion circulator (for controlling mash temperature)
Batch size
10 L (~3 gallons)
OG
North of 1.090?
Calculations on brewersfriend.com based on flaked grains puts it at 1.101 assuming 85 % brewhouse efficiency, but that seems optimistic.
My hydrometer sleeps with the fishes (in tiny pieces) either way.

Method 1. Sprouting Barley I am currently attempting this at room temperature in a plastic bowl. Some signs of germination are visible after the first air rest (e.g shoots beginning to form). I expect this step to take some more time, but clearly this is the limiting factor in this process, scheduling wise. I am shooting for (roughly) 8 hours of soaking alternated with 8 hours of air rest until adequately sprouted.
Many people (this seems to be a primary reason as to why this method is not commercially viable) have raised the issue of how to mill green malt. I am not concerned: this will go in to my Blendtec blender with some water and get instantly turned into a gooey protein sludge teeming with enzymes.
2. Toasting the adjuncts Green malt supposedly has a very high diastatic potential, I expect the green malt to bring more than enough amylase to convert the starches in the adjuncts (flours) into sugar. However, the use of flour in the mash raises several issues.
Since I am using a BIAB config, I am not overly worried about the mechanics of using flour: I have basically done this before when using the blender to mill whole malts. The resulting Weissbier got me drunk enough to come up with all this, so it must have worked pretty well. Obviously, this will not be a clear beer, but who cares. If you ever hear of a tasty clear beer, please let me know.
However, two issues that I find more concerning are: 1) the high protein content of the flours and 2) the likelihood of them not commuting any depth of flavor to the beer. Enter toasting the flours.
I have found that several methods for toasting flours are widely used in and around Louisiana for the purpose of simplifying making roux for gumbo (“dry roux”). It also seems that bakers have tried to adopt the technique to add flavors to bread. However, to bakers' dismay, toasted flour makes for weak doughs. A likely cause is the denaturing of proteins in the flour that happens at temperatures over 75 degrees Celsius (167 f). At least that's what I'm hoping. At the very least, I'm hoping it will give the wort some nice caramel flavor.
3. Mashing To my understanding, another challenge with green malt is that it will contain a lot of protein. The drying/kilning process otherwise mitigates this problem since the protein rich rootlets can be removed. Therefore, a 20 minute protein rest at 50 degrees C (122 f) will be the first stage of the mash. The temperature will then be gradually increased up to 66 degrees C where it will remain for 90 minutes to account for the expected poor efficiency.
I am considering sparging at a high temperature to reach mash-out temperatures, since this is said to help make the wort more fluid. However, this thing already has a ton of steps to achieve doubtful results, so I might just let that one go.
4. Mystery yeast The consensus on using sourdough seems to be… there is no consensus (I checked).
I have been thinking of making some form of starter, possibly with a lot of hops to keep the lactobacillus at bay, but many people on the internet report success having just plopped in a couple of spoons full of mature sourdough.
It’s clearly important to factor in that it’s pretty much a guarantee that a sourdough starter will have lactobacilli in it. This may very well turn out to be a sour beer, but I don’t want that to go overboard. Thus, I’ve concluded lactobacilli propagation must be controlled somehow. Hence the pretty weighty 60-minute hop addition.

Hey all,
I’ve been training with a running coach for about a year and a half now and have huge goals for the future. That being said - I have been recently struggling with food intake and my period. I missed a period last month for the first time but just got it back a week ago (never been so happy to get my period) and I know it’s from lack of calorie intake. I’m quite petite (5’2”, 100lbs) and I wouldn’t say I’ve lost a considerable amount of weight since I started running but I certainly haven’t gained any weight/that much new muscle (right now I’m running 70-75km/week). Is birth control a common thing for runners to be on? I feel I struggle the most with portion sizes and my nutrition is there with meals - but I just feel like I can’t quite get my appetite to increase. Have any other females had this issue? What helped with increasing your appetite? Do you snack a lot? What is a day of eating like that works for you? I want to up my weekly mileage but I’m definitely bonking right now. I’m going to get in touch with a nutritionist but thought I’d ask around here first. Any and all advice is appreciated!!!
